MAU'S SPAGHETTI & MEATBALLS:
Beef and Spinach Meatballs
- 500grams (1lb) of ground beef
- 2 cups of cooked and strained spinach (chopped)
- 1 egg
- 1/2 cup bread crumbs
- 2 heep tbls sour cream
- 2 garlic cloves (minced)
- 1 tblsp salt
- 1 tblsp onion powder
- 1 tblsp of black pepper
- 1 tblsp of paprika
- 1 tblsp of italian seasoning
- 4 cups of marinara sauce
- Olive oil
-In a large pot over medium heat add some olive oil and the marinara sauce until heat through.
-In a separate bowl add all the ingredients and mix well. Don't over handle the mixture to avoid having tough and dry meatballs.
-Form into small meatballs of your desired size.
-When the marinara sauce is simmering add the meatballs one at a time. Cover and simmer for 40 minutes or until the meatballs are cooked through.
-The meatballs will release some juice but if your marinara sauce is too thick you can add some water or stock.
-Serve over pasta of your choice.
- 1 baguette loaf
- 1/2 stick of butter (softened)
- 2 garlic cloves (finely minced)
- 1/2 tsp of salt
- 1 tsp of italian seasoning
-Preaheat oven to 350°F (180°C)
-In a small bowl mix the butter, garlic, salt and italian seasoning
-Cut the baguette loaf in half leangthwise
-Spread the butter mixture on the inside of each half.
-Bake for 5 to 10 minutes or until brown on the edges but soft in the middle.
